RESTAURANT INSPECTIONS

Jefferson City’s food code requires food-service establishments to be inspected at least once every six months.

Priority violations are items, if in noncompliance, that are more likely to contribute to food contamination, illness or an environmental health hazard. Some examples of priority items include improper holding temperatures of foods, inadequate cooking of food items, poor personal hygiene and contaminated equipment.

Examples of core items include: cleaning and maintenance of floors, walls and ceilings; open waste receptacles; unshielded light bulbs in food-preparation areas; and missing thermometers in refrigeration units for monitoring temperature.

The food code typically requires establishments to correct priority violations at the time of inspection when possible, or within a longer time frame not to exceed 10 days agreed upon with the regulatory authority. Establishments are required to correct core violations by a date agreed to with the regulatory authority not to exceed 90 days from the time of inspection.

September 2021 inspections noted:

• Trinity Lutheran Elementary School, 803 Swifts Highway, no violations.

• China Wok, 520 Ellis Blvd., two core violations: wiping cloths lying on table not in bleach water (corrected on site) and grease accumulation on floor in corner under wok station.

• Convenient Food Mart, 426 Brooks St., three core violations: residue on floors in corners in food preparation area, walk-in cooler floor has some packaging debris, dust present on ceiling in customer self-service area.

• Convenient Food Mart, 701 Eastland Drive, two core violations: debris present on the counter top and debris present on equipment.

• Domino’s Pizza, 3732 W. Truman Blvd., two core violations: food debris present on the walls near the prep table, personal food stored with store food (corrected on site).

• J. Pfenny’s Sports Grill & Pub, 217 E. High St., one priority violation: rodent feces atop ingredient bins — and five core violations: no hot water in ladies restroom, bar triple sink nor hand wash sink; floor surfaces in poor repair (walk-in beer cooler, at dish machine and in restroom hallway), non-food contact surfaces of cook line dirty (under grill and stands), beer walk-in cooler condenser icing over, men’s restroom door missing (therefore not self-closing), improper mechanical-wash sanitizer temperature (booster heater not at sanitizer temperature (no hot water at bar triple sink), food contact surfaces dirty (ice maker, pizza drawer and rolling pin, can opener), trash and litter present outside building on premise.

Follow-up inspection: five core violations: beer walk-in cooler condenser (evaporator) icing over, ambient air temperature 44-47 degrees Fahrenheit; some litter and debris present around dumpster; dumpster lids are missing/open; men’s restroom door is not self-closing; floor surfaces in poor repair (dish station, restroom hallway, beer walk-in cooler).

• JC Mart, 105 W. Dunklin St., one core violation: equipment had debris present.

• Lee’s Famous Recipe Chicken, 1550 Missouri Blvd., two core violations: food debris present on ground in dumpster enclosure, shelving units in walk-in cooler post have chipping surface.

• Longhorn Steakhouse of JC #5219, 3545 Missouri Blvd., two priority violations: item not properly date labeled (corrected on site) and items not being held at the proper temperature (corrected on site) — and three core violations: wall in the kitchen area in need of maintenance, debris present under some of the cooling equipment, gaskets on reach-in coolers are torn.

• New China Restaurant, 905 Eastland Drive Suite D, five core violations: food stored in walk-in cooler and dry storage area with proper covering, accumulation of items no longer used in restaurant, food debris present on wall surface in kitchen prep area, grease accumulation on front edge of wok cooking area and prep coolers have food debris present on surfaces, grease accumulation and debris (foil) observed on top and sides of convection oven and loose foil observed in hood exhaust area.

Follow-up inspection: no violations.

• Papa John’s Pizza, 2103 Missouri Blvd., one core violation: personal drink stored in with store foods and in prep areas.

• Sawaddee Thai Cuisine, 103 E. High St., one core violation: hot water at the hand sink did not flow properly.

• Steak ‘n Shake, 2519 Missouri Blvd., four core violations: cooler not maintaining temperature (puck cooler not holding 41 degrees Fahrenheit or below, pucks are iced to keep below 41 degrees Fahrenheit), non-food contact surfaces soiled (stem mixer, servers dipping cabinet, dress tables and gaskets, egg cooler gaskets, can opener, other equipment exteriors), damaged floor tiles (covered base tile missing throughout store restrooms, kitchen, dish room, etc., quarry tile flooring missing in walk-in cooler and walk-in freezer door), non-food contact surfaces poorly maintained or in disrepair (walk-in freezer door frame, front counter surface and sides).

• Subway at Capital Mall #15307, 3600 Country Club Drive Suite 216, one core violation: maintenance needed in the prep area.

• Taco Bell #382, 2605 Missouri Blvd., one priority violation: items in the make coolers were not properly date labeled (corrected on site) — and two core violations: floors in the men’s restroom had debris present, soda machines had debris present (corrected on site).

• The Mission LLC, 915 E. High St., two priority violations: PHF not held at 41 degrees Fahrenheit or below in Criterion cooler and backflow prevention device not present on mop sink — and one core violation: paper towels not properly dispensed in restrooms.

• Walmart Supercenter #5477 — Grocery/Dairy, 401 Supercenter Drive, one core violations: physical facilities maintained and clean (excess ice buildup in ice cream walk-in freezer, leak in condensate line of dairy walk-in cooler, clean back fill shelves of yogurt cooler, clean vents of cookie dough/biscuit wall cooler).

• Walmart Supercenter #29 — Bakery, 724 W. Stadium Blvd., one core violation: debris present in the display area.

• Walmart Supercenter #5477 — Bakery, 401 Supercenter Drive, no violations.

• Walmart Supercenter #5477 — Produce, 401 Supercenter Drive, one core violation: physical facilities maintained (hand sink loose from wall mounting).

• Walmart Supercenter #5477 — Deli, 401 Supercenter Drive, one priority violation: potentially hazardous food not held at 135 degrees Fahrenheit or above (corrected on site) — and one core violation: damaged floor surfaces (exposed aggregate around floor drains, fryer and old hand sink location, etc.).

• Walmart Supercenter #5477 — Meat/Seafood, 401 Supercenter Drive, 401 Supercenter Drive, two core violations: damaged wall (base of wall into working/storage area has broken tile); floor drain has exposed aggregate, leaking plumbing [soap/ sanitizer dispenser at triple sink leaking).

• Hy-Vee Grocery Store — Meat, 3721 W. Truman Blvd., four core violations: debris present in the display case, trim pieces in disrepair, shelves with peeling paint present and display case tracks had debris present.

• Cole County Farmers Market, 3600 Country Club Drive, no violations.

• Clarke Senior Center, 1310 Linden Drive, no violations.

• Colton’s Steakhouse, 2415 Missouri Blvd., five core violations: storage racks in walk in cooler have food debris present on tracks; faucet assembly at food preparation sink dirty with debris; drain backing up water in drain trap at bar; dirty walls, floors and ceiling because of infrequent cleaning; disposable paper towels not present at bar hand sink.

• God’s Little Tikes Childcare, 95 Grant St. Suite B, no violations.

• Sam’s Club #6505 — Grocery, 849 Stoneridge Parkway, no violations.

• Sam’s Club #6505 — Bakery, no violations. • Windstone Entertainment Event Center, 2425 Industrial Drive Suite A, no violations.

• Crossmark Inside Sam’s Club #6505, 849 Stoneridge Parkway, no violations.

• Popeye’s Louisiana Chicken, 2102 Missouri Blvd., one priority violation: items held in an ice bath were not at the proper temperature (corrected on site) — and one core violation: improper method of ware washing.

• Kentucky Fried Chicken, 1209 Missouri Blvd., six priority violations: roaches present in the food prep area, food contact surfaces have debris present, procedures were not in place for hot holding items, items in the hot holding unit was not at the proper priority temperature, sanitizer was not at the proper concentration, items in the cold holding area were not at the proper temperature — and 17 core violations: gas shock not present on the walkin cooler door, debris present on the walk-in cooler floor, cove base in disrepair, no hand wash sign present at the back-hand sink, gasket on a reachin cooler had black debris present, black debris on the wall at the triple sink, drain under the soda machine has buildup of debris and trash, walls in the food prep area have debris present, microwave with debris present, grout missing in the floor tiles in and around the fryer area, lobby soda machine has a buildup of debris present, walls in the lobby soda area have debris present, both bathroom floors have debris present, employee drinks not stored in area away from food prep, hot holding units were not working properly, fried chicken cabinets have debris present, chicken holding cabinet has gaskets loose.

Follow-up inspection: no violations.

• High Rise Bakery, 118 E. High St., one priority violation: item in hot holding area was not at the proper temperature (corrected on site).

• Capital City High School, 1650 Cavalier Drive, no violations.

• Domino’s Pizza, 724 W. Stadium Blvd., no violations.

• Pizza Kwik Mobile Food Unit, 1822 Tanner Bridge Road, one priority violation: potentially hazardous foods not held at 41 degrees Fahrenheit or below — and one core violation: outer opening to mobile food establishment back door open (corrected on site).

• Little Caesars Pizza, 2407 Missouri Blvd. Suite A, three core violations: food product boxes stored directly on floor, covered trash container lid missing in employee bathroom, dust present on ceiling tiles in kitchen.

• The Curry ‘N’ Grill, 512 Ellis Blvd. Suite A, one priority violation: : Single portions of food did not have the proper date labeling (corrected on site) — and one core violation: non-food items stored in the prep area (corrected on site).

• Show Me Meat Company, 3600 Country Club Drive, no violations.
